Apple Brown Betty

Ingredients

  • 4 cups soft white breadcrumbs
  • 1/3 cup butter, melted
  • 1 cup firmly packed brown sugar
  • 1 TBS ground cinnamon
  • 4 large apples, peeled, cored, and cut into 1/4-inch-thick slices
  • 1 cup apple cider

Instructions

  • Preheat oven to 350. Stir together breadcrumbs and butter. Stir together brown sugar and cinnamon.
  • Place half of apple slices in a lightly greased 8-inch square backing dish. Sprinkle apples with half of brown sugar mixture and half of breadcrumb mixture. Repeat procedure with remaining apples, brown sugar mixture, and breadcrumb mixture. Pour apple cider over top.
  • Bake at 350 for 45-55 minutes or until browned.

Chocolate Pound Cake

Ingredients

  • 2 sticks (1 cup) margarine, softened
  • 2 1/2 cups sugar
  • 2 tsp vanilla extract
  • 5 eggs
  • 3/4 cup unsweetened cocoa powder, firmly packed
  • 2 1/2 cups flour
  • 1 tsp baking powder
  • 1 cup sour cream
  • whipped topping

Instructions

  • Preheat oven to 325.
  • In a large bowl beat together, with an electric mixer, margarine and sugar until creamy, about 1-2 minutes. Add vanilla extract. Add eggs one at a time, beating well after adding each egg.
  • Sift together cocoa, flour, and baking powder. With mixer on low, stir into margarine mixture alternately with sour cream until just combined. Turn batter into greased and floured tube pan. Smooth top.
  • Bake at 325 for 55-65 minutes or until a cake tester comes out clean. Let cool in pan for 30 minutes. Remove from pan and cool completely on wire rack.
  • Serve with whipped topping.

Banana Crunch Muffins

Ingredients

  • 1 cup whole wheat flour
  • 3/4 cup all-purpose flour
  • 1 cup wheat bran
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 2 eggs
  • 2/3 cup packed light-brown sugar
  • 1 cup mashed bananas (about 2 medium)
  • 1 cup buttermilk
  • 1/4 cup canola oil
  • 1 1/2 tsp vanilla extract
  • 1 cup granola
  • 1/2 cup mini chocolate chips (optional)

Instructions

  • Heat oven to 400. Grease the bottoms only of 12 standard muffin cups.
  • In a large bowl, whisk together both flours and the bran, baking powder, baking soda, cinnamon, and salt. In a medium bowl, whisk together the eggs, brown sugar, bananas, buttermilk, oil, and vanilla extract. Add the egg mixture to the dry ingredients and stir just until the batter is blended. Use a flexible spatula to fold in the mini chocolate chips (if you’re using them).
  • Divide the batter among the muffin cups and sprinkle the tops with granola. Bake the muffins for 15 minutes or until a toothpick inserted into the center of one comes out clean. Let the muffins cool in the pan on a wire rack for 5-10 minutes before removing them.
  • Makes 1 dozen muffins

Banana Nut Bread

Ingredients

  • 1 3/4 cups flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup sugar
  • 1 large egg, lightly beaten
  • 1 cup mashed ripe bananas
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1/2 cup chopped pecans

Instructions

  • Preheat oven to 350.
  • Grease 8.5 x 4.5 loaf pan.
  • Combine flour, baking powder, salt, and sugar in large bowl. Make well in center for the liquid ingredients.
  • Combine egg, bananas, milk, vegetable oil and add to dry mixture.
  • Stir just until moistened. Stir in pecans.
  • Spoon batter into loaf pan. Bake at 350 for 1 hour or until done. Cool in pan for 10 minutes, then remove.

MoonPie Hot Fudge Sundae

Ingredients

  • 1 chocolate MoonPie, warmed
  • vanilla ice cream
  • whipped cream
  • chocolate sauce, warmed
  • cherry

Instructions

  • Microwave the MoonPie on high for 10-12 seconds and then place in bowl.
  • Add 2 scoops of vanilla ice cream.
  • Top with chocolate sauce, whipped cream, and a fresh cherry.
